What does a SimCard Reader do actually? Just takes all the data from the SIM Card and makes available for viewing on tyhe internet?

I think while the idea does sound good in theory, I am a little worried that someone might get their hands on the data, so I will pass.

The data are not published on the Internet. The reader will retrieve the stuff for you, but what you do with the data afterwards is up to you.
